How Is Fish Oil Processed?

Fish oil processing by lyophilization — Background
The traditional technique for preparing fish oil powder is spray drying. Due to the different spray methods, it is divided into pressure spray drying, airflow spray drying, and centrifugal spray drying. The disadvantage of this kind of production method is: the spray drying method uses the emulsion to be atomized into fine particles; during the process, the material is in contact with the air and the heat, oil and fat-soluble nutrients are therefore inevitably oxidized, reducing the effective components of nutrients, and producing harmful peroxides and trans fatty acids. Therefore, it is of great importance to introduce a new technique for fish oil processing without destroying any original nutrients and producing unnecessary elements.
Fish oil processing by lyophilization — Procedure
a. Preparation of emulsion:
1. Add 100 kg of water into the emulsifier, and then add 2 kg of casein sodium, homogenize them at 500 rpm for 5 minutes, then add 2 kg of soy protein, homogenize again at 2000 rpm for 10 minutes.
2. Add 20 kg of maltodextrin, continue to homogenize at 2000rpm for 10 minutes. Add 10.5 kg of fish oil, homogenize at 4000rpm for 20 minutes. When the material temperature reaches 30°C, pour the material into a high-pressure homogenization machine. The first cycle is performed at a pressure of 200 Bar, and the second is at a pressure of 400 Bar to make an emulsion.
b. Emulsion pre-freezing
When the fish oil processing by lyophilization is at the step of pre-freezing, you should quickly freeze the prepared emulsion to -35°C, and then move it into the vacuum freeze-drying box, evacuate until the vacuum degree reaches 71 Pa.
c. Sublimation and drying
Set the temperature in the lyophilization machine to 50°C for 12 hours. At this time, the temperature of the solid material is -5°C ; Adjust the temperature of the freeze-drying box to 40°C, the continuous cooling time to 20 hours. Then set the temp. to 30 °C with 20-hours cooling time. At last, the temp. is set to room temperature, and the vacuum freeze drying machine continues to cool down for 8 hours until the temp. is as low as that of the material and heating plate.
d. Flour milling
The last step of fish oil processing by lyophilization is flour milling. Take out the solid freeze-dried material and make it into powder in a mill.
The freeze-dried fish oil prepared by this process contains 36% fish oil, 10.8 g EPA and 7.2 g DHA per 100 g powder.
